I post a picture of these beets today because the color of them brings me joy every time I cut them. Every. Single. Time. 

It’s the same feeling I get when I see a beautiful flower.  When I see flowers/plants, I think of beauty, the oxygen they provide, and the life they symbolize. When I look at these beets, I look upon them with gratitude knowing the vitamins, minerals, and goodness I will receive from eating them. 

Mindfulness comes in many forms. When we take time to reflect and appreciate the nutrition food gives us, we are building towers a more positive relationship with food. 

The next food you eat or meal you prepare- I encourage you think of the steps it took to get to you. The work that was put into growing it, harvesting it, and preparing it, so that it can fill you with the goodness it offers.
