Moroccan Spiced Cauliflower
When you ask someone what their favorite flower is; I highly doubt cauliflower is at the top of their list. I recognize it’s not a fun vegetable. It’s not colorful, it’s messy when it crumbles, and overall it doesn’t taste like much.
If we compare broccoli and cauliflower, most would choose broccoli because of the green color, taste, and texture. However, cauliflower has a lot to bring to the table, and should not be overlooked.
Cauliflower, like all the other vegetables in the cruciferous family including broccoli, bok choi, brussel sprouts, and kale, have been shown to reduce inflammation and oxidative stress. In some individuals with a particular gene, they have been show to activate detoxifying enzymes.
At church last week, the message was all about vision and how you CHOOSE to see a picture, a scenario, an opportunity. It’s how we look at things that determines its value. If we see zero value, we will find zero value.
In this recipe, I chose to look at cauliflower as a blank canvas. What can I do to pack in color, taste, and overall nutrients?
For this salad, I choose to roast cauliflower on a pan with some chickpeas seasoned with a Moroccan mix of spices including cumin, tumeric, ginger, black pepper, cinnamon, coriander, cayenne, allspice, and cloves and laid it on a bed of kale and spinach and mixed in some golden raisins to match the gold color. I then topped with some scallions and a mixture of apple cider vinegar, olive oil, and honey.
MOROCCAN RAS EL HANOUT
INGREDIENTS
1 teaspoon ground cumin
1 teaspoon ground ginger
1 teaspoon turmeric
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander seeds
1/2 teaspoon cayenne
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
PREPARATION
In a small bowl whisk together all ingredients until combined well. Spice blend keeps in an airtight container at cool room temperature 1 month.
