Stir- Fry Noodles- Serves 10 (great for meal prep)

2 14 oz packages rice noodles 
4 Tbsp coconut oil 
4 small white onions, diced 
8 garlic cloves, peeled and minced 
8 scallions, sliced 
5 inches ginger root, minced 
4 carrots, sliced 
5 cups (2 large tubs) white button mushrooms, sliced 
3 lbs shrimp 
16 Tbsp tamari 
pepper to taste 
4 cups spinach, rinsed
4 cups broccoli florets
sesame seeds to top 

Directions:

  1. Defrost the shrimp in cool water, peel, season (for this recipe I used Trader Joe's Multipurpose Umami Seasoning Blend). Sauté in batches until fully cooked, set aside.

  2. Cook rice noodles according to package instructions, but slightly undercooking them. Drain & rinse with cold water, set aside.

  3. To cook in two batches of 5 servings, heat 2 Tbsp of coconut oil in a large stir-fry pan over high heat. Add the 2 onions, 4 cloves garlic, 4 scallions, 1/2 the minced ginger, and sauté until the onions are translucent, about 2 minutes.

  4. Add 2 carrots, 2.5 cups mushrooms to the pan and continue stir-frying for 2-3 more minutes. Add 8 Tbsp tamari and pepper to taste,

  5. Add 2 cups spinach, 2 cups broccoli, and cooked noodles and stir fry for another 3-5 minutes before removing from heat.

  6. Portion into meal prep containers with adding same amount of shrimp (about 10 shrimp) to each container. Top with sesame seeds. Repeat steps 3-6 for 5 more servings.
