Roasted Broccoli Pecan Grain Bowl

Grain bowls are a great way to add multiple vitamins and minerals to one meal through various different foods. Whole grains and vegetables also help you reach your fiber goals for the day! Check out one of my favorite combinations below!

Time: ~60 minutes

Servings: 4-5 servings

Ingredients:

  • 2 crowns broccoli (3 if small)

  • 2 tbs olive oil (more if desired)

  • Salt and pepper for seasoning

  • 1/2-3/4 cup uncooked quinoa

  • 1 bunch kale

  • 3 garlic cloves

  • 1/4 cup pecans

  • Protein of choice (I used 1.5 lbs chicken breast here)

Extra Toppings (if desired):

  • Avocado

  • Feta Cheese

  • Olive oil

  • Balsamic vinegar

Instructions:

  1. Preheat oven to 425 degrees F

  2. Line large baking pan with tin foil

  3. Cut broccoli into small chunks (including broccoli stems)

  4. Place broccoli in large bowl, drizzle with olive oil, and season with salt and pepper. Toss to combine and spread on lined baking pan. Once oven is preheated, place in oven and roast for about 20 minutes (check and flip at 10 minutes)

  5. If desired, prepare protein of choice and cook with broccoli

  6. While broccoli is roasting, prepare quinoa according to package directions

  7. While broccoli is roasting and quinoa is cooking on stove, cook kale on stove. Chop kale and mince garlic. Sauté garlic in pan on medium heat for 1 minute, add kale, cook an additional 10 minutes. Use tongs to toss around in pan to thoroughly cook.

  8. Once all ingredients are prepared, prep 4-5 bowls ahead of time or prep one at a time as needed.

  9. For each bowl, add roughly 1/4 cup quinoa, 4oz chicken or protein of choice, 1/2 cup roasted broccoli, 1/4 cup cooked kale, 1 Tbsp pecans, and any additional toppings you prefer.

  10. Drizzle with olive oil and balsamic vinegar before eating for dressing.

  11. Enjoy!
