Spinach Feta Hummus

Spinach Feta Hummus

Serves: 6 to 10

Ingredients

  • 1 15 oz can of chickpeas - drained and rinsed

  • 4 cups of baby spinach - washed and dried

  • 2 Tbs tahini sauce

  • 3 Tbs fresh lemon juice

  • ¼ cup olive oil

  • 1 large or two medium sized garlic cloves - roughly chopped

  • ⅛ tsp red pepper flakes

  • 8 twists of black pepper

  • 4 oz feta - cut into cubes.

Instructions

  1. Prep all your ingredients - wash the spinach, peel the chickpeas (if you're planning on doing this - if not then use them whole), juice your lemon, roughly chop the garlic, etc..

  2. Add all ingredients except feta to a food processor and process until smooth. About 2 to 3 minutes.

  3. Add feta and blend to combine - about 1 to 2 minutes.

  4. Serve with your choice of crackers, bread or fresh veggies.
